Now that the cat is officially out of the bag, I can share our latest creation that’s been bubbling away for 5 months.
The Killer Queen Chug Challenge Sauce!
In Oct 2019, we were given the opportunity to create a product in collaboration with the UK Chilli Queen (UKCQ) and League of Fire (LoF).
This product would join other chilli challenges on the LoF website where a different league of chilli challengers compete against the clock to rank in Chilli Eating Champion leaderboards.
After lots of brainstorming, scoping and bouncing ideas between the UKCQ & LoF it was settled. The Chilli Project would produce the first challenge sauce in the 'League of Fire Presents' range! The main goal for this sauce was to be insanely hot and incredibly tasty... (and we achieved that!)
Here's a little behind the scenes of the process creating this killer challenge sauce.
But, before I dive in, you can check out the sauce here directly on the League of Fire website.
Firstly, we needed a base, and given the scope of the project, it made sense for us to use the hottest chilli pepper in the world. The Carolina Reaper.
Lots of them.
We even got the Chilli Project mother in law involved de-stemming this lot!
Next, we needed flavour.
These incredibly hot peppers joined onion, garlic, carrot and sea salt into a 25L fermentation vessel and was left to work its magic for 5 months.
Now it was finally time to put the 'Killer Queen Chug Sauce' together.
Pineapple, mango, vinegar and lime juice, were added together with the mash to the stockpot and we fired up the burners!
But there was one final ingredient to go in...
You guessed it, a good healthy measure of chilli extract (9 Million Scoville SHU extract to be exact). Making up 2% of the total volume of sauce! This is gonna hurt.
600+ bottles later the 'Killer Queen Chug' was born!
